Healthy Almond Poppy Seed Muffins

These gluten-free and dairy-free almond poppy seed muffins are a healthy and delicious treat. Made with almond flour and coconut oil, they are packed with almond flavor and a hint of lemon zest. Perfect for a nutritious breakfast or snack

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup tapioca flour
  • 1/4 cup poppy seeds
  • 1/2 cup coconut sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions:

Warm up the oven to 350F 175C and put paper liners in a muffin tin

Put poppy seeds, coconut sugar, baking soda, salt, almond flour, coconut flour, and tapioca flour in a large bowl

Add the eggs, almond milk, melted coconut oil, vanilla extract, almond extract, lemon zest, and lemon juice to a different bowl, and mix them together using a whisk

Add the dry ingredients to the wet ones and mix them together until everything is well mixed

Fill up each muffin tin cup about two thirds of the way to the top with batter

If you stick a toothpick into the middle of a muffin, it should come out clean after 20 to 25 minutes in a hot oven

For a few minutes, let the muffins cool in the pan

Then, move them to a wire rack to cool completely
