Quinoa Tomato Tart
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pint cherry tomatoes, halved
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/4 cup fresh basil, chopped
- 1 pre-made pie crust
Instructions:
Preheat oven to 375F 190C
In a saucepan, combine quinoa and water
Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is cooked and water is absorbed
In a skillet, heat olive oil over medium heat
Add chopped onion and garlic, saut until softened
Add halved cherry tomatoes to the skillet, cook for 3-4 minutes until slightly softened
Stir in cooked quinoa, dried oregano, salt, and pepper
Remove from heat
Roll out the pie crust and press it into a tart pan
Prick the bottom with a fork
Spread the quinoa mixture evenly over the pie crust
Top with shredded mozzarella cheese and bake in the preheated oven for 25-30 minutes or until the crust is golden and the cheese is melted
Remove from oven, sprinkle with fresh chopped basil
Let it cool for a few minutes before slicing
Serve and enjoy
