Veggie Cream Cheese Stuffed Chicken with Bacon
Ingredients:
- 4 boneless chicken breasts
- 1 cup veggie cream cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced mushrooms
- 4 slices of bacon
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions:
Set the oven temperature to 375F 190C
Cook the bacon slices in a skillet until they become crispy
Take out and let dry on paper towels
After crumbling the bacon, set it aside
Heat the olive oil in the same skillet over medium heat
Add the chopped onions, mushrooms, and bell peppers
Saut for approximately five minutes, or until they are tender
To taste, add salt and pepper for seasoning
To make a pocket, cut a horizontal slit in each chicken breast
Take care not to slice through completely
Place a heaping spoonful of the vegetarian cream cheese and a small amount of the sauted vegetable mixture inside each chicken breast
Place a piece of crispy bacon around each stuffed chicken breast, securing with toothpicks if needed
Put the bacon-wrapped and stuffed chicken breasts in a baking dish
Bake for 25 to 30 minutes, or until the chicken is thoroughly cooked and the center is no longer pink, in a preheated oven
Serve hot, topped with any leftover bacon bits and sauted vegetables
