Black Bean and Corn Salad
This Mexican-inspired Black Bean and Corn Salad is a refreshing and flavorful dish thats perfect for picnics, potlucks, or as a side dish for your favorite Mexican meals. Its packed with protein, fiber, and zesty flavors.
Ingredients:
- 1 can 15 oz black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 avocado, diced optional
- Tortilla chips for serving optional
Instructions:
In a large bowl, combine the black beans, corn, red bell pepper, red onion, and cilantro
In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper
Pour the dressing over the bean mixture and toss to combine
If using avocado, gently fold in the diced avocado
Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld
