Pizza Salad with Homemade Gluten-Free Croutons
This Pizza Salad with homemade gluten-free croutons lets you enjoy the tastes of pizza in a healthier way. It has just the right amount of fresh vegetables, herbs, and traditional pizza toppings. A tangy balsamic vinaigrette dresses it all off.
Ingredients:
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn
- 1/4 cup pepperoni slices
- 1/4 cup mozzarella cheese, shredded
- 1/4 cup gluten-free bread, cubed for croutons
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/4 cup balsamic vinaigrette dressing
Instructions:
Preheat the oven to 350F 175C
In a bowl, toss the gluten-free bread cubes with olive oil, garlic powder, Italian seasoning, salt, and pepper until well coated
Spread the seasoned bread cubes on a baking sheet and bake for 10-12 minutes or until they turn golden and crispy
Remove from the oven and let them cool
In a large salad bowl, combine the mixed greens, cherry tomatoes, black olives, red onion, torn basil leaves, pepperoni slices, and mozzarella cheese
Top the salad with the homemade gluten-free croutons
Drizzle balsamic vinaigrette dressing over the salad
Toss the salad gently to mix all the ingredients and coat them with the dressing
Serve immediately as a delicious and satisfying pizza-inspired salad
