Slow Cooker Coconut Curry Kale Soup

A tasty and comforting coconut curry kale soup that is cooked slowly in a crockpot. This soup is great for a cozy meal on a cold day because it is full of healthy foods and fragrant spices.

Ingredients:

  • 1 can 14 oz coconut milk
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1 sweet potato, peeled and diced
  • 2 cups kale, chopped
  • 1 can 14 oz chickpeas, drained and rinsed
  • Salt and pepper to taste
  • 2 tbsp lime juice
  • Fresh cilantro, for garnish

Instructions:

In a slow cooker, combine coconut milk, vegetable broth, onion, garlic, ginger, curry powder, turmeric, cumin, and red pepper flakes

Add diced sweet potato, chopped kale, and chickpeas

Stir to combine

Season with salt and pepper to taste

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until sweet potatoes are tender

Stir in lime juice just before serving

Garnish with fresh cilantro and serve hot
