Chicken Broccoli Salad

This easy and tasty chicken broccoli salad is a low-carb choice for lunch or as a side dish. A creamy and tasty dressing made of mayonnaise, sour cream, Dijon mustard, red onion, and fresh parsley is tossed with diced chicken that has been cooked and broccoli florets that have been blanched. You can make it ahead of time and eat it as a side dish with any keto-friendly meal.

Ingredients:

  • 2 cups cooked chicken, diced
  • 2 cups broccoli florets, blanched
  • 1/2 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp Dijon mustard
  • 1/4 cup diced red onion
  • 2 tbsp chopped fresh parsley
  • Salt and pepper, to taste

Instructions:

In a large mixing bowl, combine the diced chicken and blanched broccoli florets

In a separate small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, diced red onion, chopped parsley, salt, and pepper until well combined

Pour the dressing over the chicken and broccoli mixture and toss until everything is evenly coated with the dressing

Adjust seasoning with salt and pepper, if necessary

Serve immediately as a low-carb lunch or side dish, or refrigerate until ready to serve
