Low-Carb Zucchini Nachos

If youre on the keto diet, these Low-Carb Zucchini Nachos are a tasty alternative to regular nachos. Theyre loaded with flavor and great for satisfying your cravings while keeping your carb count low. The zucchini slices serve as the base, and cheese, tomatoes, olives, and sour cream are added on top.

Ingredients:

  • 2 medium zucchinis, sliced into rounds
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 2 tablespoons sliced black olives
  • 2 tablespoons chopped green onions
  • 1/4 cup sour cream
  • 1 tablespoon chopped fresh cilantro optional

Instructions:

Get the oven ready by heating it up to 400F 200C

Put zucchini slices in a bowl and add garlic powder, onion powder, chili powder, paprika, cumin, salt, and pepper

Toss the zucchini slices until they are well covered

To make a zucchini cake, put slices of zucchini on a baking sheet that has been lined with parchment paper

Put the zucchini in an oven that has already been heated for 10 to 12 minutes, or until it is soft and golden

Take the zucchini slices out of the oven and spread the shredded cheddar cheese out evenly over them

Put it back in the oven and bake for five more minutes, or until the cheese melts and the sauce bubbles

Add black olives, green onions, sour cream, and fresh cilantro on top after taking it out of the oven, if you want

Serve right away and enjoy
