Slow Cooker Chicken & Green Chile Soup
This Slow Cooker Chicken & Green Chile Soup is a comforting and flavorful dish thats perfect for chilly days. Packed with tender chicken, hearty beans, and aromatic spices, its a satisfying meal the whole family will love.
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 cup diced onion
- 1 cup diced bell peppers
- 2 cloves garlic, minced
- 1 4 oz can diced green chiles
- 4 cups low-sodium chicken broth
- 1 cup frozen corn kernels
- 1 15 oz can white beans, drained and rinsed
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Optional toppings: chopped cilantro, shredded cheese, diced avocado, sour cream
Instructions:
Place chicken breasts in the bottom of the slow cooker
Add diced onion, bell peppers, garlic, green chiles, chicken broth, corn, white beans, cumin, chili powder, salt, and pepper to the slow cooker
Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and tender
Remove chicken from the slow cooker and shred using two forks
Return shredded chicken to the slow cooker
Stir well to combine all ingredients
Serve hot, garnished with chopped cilantro, shredded cheese, diced avocado, and sour cream if desired
