Ingredients:

  • 1/2 cup 1 stick unsalted butter
  • 1/2 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Powdered sugar, for dusting

Instructions:

Preheat the oven to 350F 175C

Grease and flour a madeleine pan

In a small saucepan, melt the butter over medium heat

Cook until it turns a golden brown color and has a nutty aroma

Remove from heat and let it cool slightly

In a mixing bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt

In a separate bowl, beat the granulated sugar and eggs until well combined

Stir in the vanilla extract and almond extract into the egg mixture

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Gently fold in the brown butter until the batter is smooth and uniform

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes

Spoon the chilled batter into the prepared madeleine pan, filling each mold about 3/4 full

Bake in the preheated oven for 10-12 minutes or until the madeleines are golden brown around the edges and spring back when lightly pressed

Remove from the oven and let them cool in the pan for a few minutes before transferring to a wire rack to cool completely

Dust the cooled madeleines with powdered sugar before serving
