Buckwheat Breakfast Blini Kebabs

A fun and tasty way to enjoy a favorite breakfast food on a stick is with these Buckwheat Breakfast Blini Kebabs. The buckwheat blini squares are light and crispy, and the fresh fruit gives them a sweet burst. Add a drizzle of maple syrup to make it taste even better.

Ingredients:

  • 1 cup buckwheat flour
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1/2 cup blueberries
  • 1/2 cup strawberries, sliced
  • 1/2 cup banana slices
  • Maple syrup for drizzling

Instructions:

In a large bowl, whisk together buckwheat flour, all-purpose flour, sugar, baking powder, baking soda, and salt

In a separate bowl, whisk buttermilk, eggs, and melted butter

Pour the wet ingredients into the dry ingredients and stir until well combined

Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter

Pour 1/4 cup of batter onto the skillet for each blini

Cook until bubbles form on the surface, then flip and cook the other side until golden brown

Repeat with the remaining batter

Once blini are cooled, cut them into small squares

Thread blini squares, blueberries, strawberries, and banana slices onto wooden skewers in an alternating pattern

Drizzle maple syrup over the kebabs just before serving
