Paleo Coconut Flour Cookies
Ingredients:
- 1/2 cup coconut flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- A pinch of salt
- 1/4 cup unsweetened shredded coconut
- 1/4 cup dairy-free chocolate chips optional
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine the coconut flour, melted coconut oil, honey or maple syrup, eggs, vanilla extract, baking soda, and a pinch of salt
Mix until a dough forms
Fold in the unsweetened shredded coconut and dairy-free chocolate chips if desired
Using your hands, shape the dough into small cookie rounds and place them on the prepared baking sheet
Flatten each cookie slightly with a fork, making a crisscross pattern on top
Bake in the preheated oven for 12-15 minutes or until the edges are golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
