Roasted Garlic White Bean Dip
This creamy and flavorful white bean dip is made with roasted garlic and fresh herbs, making it a perfect appetizer or snack for any occasion. Its vegan, gluten-free, and packed with protein and fiber.
Ingredients:
- 1 bulb of garlic
- 1 can 15 oz white beans, drained and rinsed
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh chives
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
Cut off the top of the garlic bulb to expose the cloves, drizzle with olive oil, and wrap in aluminum foil
Roast the garlic in the preheated oven for 30-40 minutes until soft and golden brown
Remove from the oven and allow to cool slightly before squeezing the roasted garlic cloves out of their skins
In a food processor, combine the roasted garlic cloves, white beans, lemon juice, olive oil, parsley, chives, salt, and pepper
Blend until smooth and creamy, scraping down the sides as needed
Taste and adjust seasoning if necessary
Transfer the dip to a serving bowl, garnish with additional chopped herbs if desired, and serve with crackers, bread, or sliced vegetables
