Vegan Gluten-Free Penne a la Vodka
Indulge in the creamy, flavorful delight of Vegan Gluten-Free Penne a la Vodka. This dairy-free rendition of the classic Italian dish is made with a rich tomato-coconut sauce infused with vodka for an extra kick. Nutritional yeast adds a cheesy flavor, while fresh basil lends a touch of freshness.
Ingredients:
- 12 oz gluten-free penne pasta
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can 14 oz crushed tomatoes
- 1/2 cup vodka
- 1 cup canned coconut milk
- 1/4 cup nutritional yeast
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions:
Cook penne pasta according to package instructions
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add diced onion and minced garlic
Saut until onions are translucent
Add crushed tomatoes and vodka to the skillet
Simmer for about 10 minutes, allowing the alcohol to cook off
Stir in coconut milk and nutritional yeast
Cook for another 5 minutes until the sauce thickens slightly
Season with salt and pepper to taste
Add the cooked penne pasta to the skillet and toss until well coated with the sauce
Serve hot, garnished with fresh basil leaves
