Low Carb Avocado Chicken Salad
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 ripe avocados, diced
- 2 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup cucumber, diced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lemon juice
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
Add salt and pepper to the chicken breasts
In a pan, heat 1 tablespoon of olive oil over medium-high heat
Put in the chicken breasts and cook for about 7 to 8 minutes on each side, or until the chicken is fully cooked and the middle is no longer pink
After taking the chicken out of the pan, let it rest for a few minutes
Then, cut it into thin strips
Dice the avocados and put them in a large salad bowl
Add the salad greens, cherry tomatoes, red onion, cucumber, feta cheese, and chopped cilantro
Salt and pepper should be mixed with the lemon juice, extra virgin olive oil, minced garlic, and whisked together in a small bowl
Put the chicken slices in the salad bowl and then pour the dressing over the salad
Gently toss everything together to mix
