A tasty and healthy treat, this Snickerdoodle Chickpea Smoothie tastes like a snickerdoodle cookie in liquid form. Its a great way to start the day or fuel up after a workout because its full of protein from chickpeas and healthy fats from almond butter.

Ingredients:

  • 1 cup cooked chickpeas
  • 1 ripe banana
  • 1/2 cup unsweetened almond milk
  • 1/4 cup rolled oats
  • 1 tbsp almond butter
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup optional, for sweetness
  • Ice cubes optional, for thickness
  • Pinch of salt

Instructions:

Add the cooked chickpeas, ripe banana, almond milk, rolled oats, almond butter, ground cinnamon, vanilla extract, maple syrup if desired, and a pinch of salt to a blender

Blend until smooth and creamy, adding ice cubes if you prefer a thicker texture

Taste and adjust sweetness or cinnamon to your liking, adding more maple syrup or cinnamon as needed

Pour into a glass and sprinkle a dash of cinnamon on top for garnish
