Veggie Couscous Cakes
Ingredients:
- 1 cup couscous
- 1 cup boiling water
- 1 cup mixed vegetables e

- , carrots, peas, corn
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 2 eggs, beaten
- 2 tablespoons olive oil
Instructions:
Pour boiling water over the couscous in a bowl
Put a lid on top and wait five minutes
Use a fork to fluff up the couscous, then move it to a bigger bowl for mixing
Put the couscous in a bowl
Add the breadcrumbs, Parmesan cheese, minced garlic, dried oregano and basil, salt, and pepper
Combine well by mixing
Beat the eggs and add them to the mixture
This will hold it together
You can add a little more beaten egg to get the right consistency if the meat is too dry
Set a pan on medium heat and add the olive oil
Make patties out of the couscous mixture and carefully place them in the hot pan
They should be cooked for four to five minutes on each side, or until they are golden brown and crispy
Hot vegetable couscous cakes should be served with your favorite salad or dipping sauce
