40 Minute Fresh Keto Chili
Ingredients:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1 can 14 oz diced tomatoes
- 1 can 8 oz tomato sauce
- 1 cup beef broth
- 2 tablespoons tomato paste
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: shredded cheddar cheese, diced avocado, sour cream, chopped cilantro
Instructions:
In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it up with a spoon as it cooks
Add the diced onion, minced garlic, diced bell pepper, and minced jalapeno pepper to the pot
Cook until the vegetables are softened and fragrant, about 5 minutes
Stir in the diced tomatoes, tomato sauce, beef broth, tomato paste, chili powder, ground cumin, paprika, salt, and pepper
Bring the chili to a simmer, then reduce the heat to low
Cover and let it simmer for 20-25 minutes, stirring occasionally
Taste and adjust seasoning if needed
If the chili is too thick, you can add more beef broth to reach your desired consistency
Serve the fresh keto chili hot, garnished with optional toppings like shredded cheddar cheese, diced avocado, sour cream, and chopped cilantro
