Cilantro Lime Chicken Pasta
The fresh flavors of cilantro and lime go well with the richness of the creamy sauce and the tender chicken slices in this Cilantro Lime Chicken Pasta. This dish is quick and easy, and its great for a busy weeknight dinner or a casual get-together with friends.
Ingredients:
- 2 chicken breasts, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces pasta of your choice
- 1/4 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- Juice of 2 limes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon butter
Instructions:
Season chicken slices with salt and pepper
Heat olive oil in a pan over medium heat
Add chicken slices and cook until browned and cooked through, about 5-7 minutes per side
Meanwhile, cook pasta according to package instructions
Drain and set aside
In the same pan used for cooking chicken, add garlic and cook until fragrant, about 1 minute
Stir in lime juice, heavy cream, cilantro, and Parmesan cheese
Bring to a simmer
Add cooked pasta to the sauce and toss until well coated
Serve the cilantro lime chicken pasta hot, garnished with additional cilantro if desired
