Crock Pot Chicken Cacciatore with Kick
A flavorful twist on the classic chicken cacciatore, this crock pot version packs a punch with red pepper flakes and red wine. Perfect for busy days when you want a delicious meal ready when you come home.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 onion, thinly sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 can 14
- 5 oz diced tomatoes
- 1 can 6 oz tomato paste
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup red wine
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- Cooked pasta or rice for serving
Instructions:
In a skillet, heat olive oil over medium-high heat
Season chicken breasts with salt, pepper, oregano, basil, and red pepper flakes
Brown chicken on both sides in the skillet, about 3 minutes per side
Transfer chicken to crock pot
In the same skillet, saut onions, garlic, and bell peppers until softened, about 5 minutes
Add diced tomatoes, tomato paste, chicken broth, and red wine to the skillet
Stir to combine
Pour the mixture over the chicken in the crock pot
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender
Serve chicken cacciatore over cooked pasta or rice
