Mediterranean Deviled Eggs with Roasted Red Pepper Hummus
These Mediterranean-inspired deviled eggs are a delightful twist on the classic recipe. The addition of roasted red pepper hummus and Greek yogurt gives them a creamy and tangy flavor, while the garnishes of fresh parsley and Kalamata olives add a pop of color and a hint of brininess. Perfect as an appetizer or snack for any occasion
Ingredients:
- 6 hard-boiled eggs
- 1/4 cup roasted red pepper hummus
- 2 tablespoons Greek yogurt
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Chopped fresh parsley for garnish
- Kalamata olives for garnish
Instructions:
Make a cut down the middle of each hard-boiled egg and take out the yolk
Mix the egg yolks, Greek yogurt, olive oil, lemon juice, garlic powder, salt, and pepper in a bowl until everything is well mixed
If you want a neater look, you can pipe the mixture back into the egg white halves instead of spooning it in
Add chopped fresh parsley and a Kalamata olive to the top of each deviled egg
Put it in the fridge for at least 30 minutes before you serve it
