Vegan Teff Banana Pancakes
Its easy to make these vegan teff banana pancakes that are fluffy and taste great. Teff flour gives food a nutty flavor and more nutrition because it has a lot of fiber and protein. Great for a healthy and tasty breakfast or brunch
Ingredients:
- 1 ripe banana, mashed
- 1 cup teff flour
- 1 tablespoon baking powder
- 1 tablespoon ground flaxseed
- 1 cup almond milk or any plant-based milk
- 1 tablespoon maple syrup or vegan honey substitute
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- Pinch of salt
- Coconut oil for cooking
Instructions:
In a mixing bowl, combine mashed banana, teff flour, baking powder, ground flaxseed, almond milk, maple syrup, vanilla extract, cinnamon, and salt
Mix until smooth batter forms
Heat a non-stick skillet or griddle over medium heat and lightly grease with coconut oil
Pour 1/4 cup of batter onto the skillet for each pancake
Cook until bubbles form on the surface, then flip and cook until golden brown on both sides, about 2-3 minutes per side
Repeat with the remaining batter, adding more coconut oil to the skillet as needed
Serve warm with your favorite toppings like fresh fruit, nuts, or vegan whipped cream
