Lemon Lavender Earl Grey Mini Cakes

These little cakes are the perfect mix of lemony, floral lavender, and mild Earl Grey tea notes. They are a delicious treat, whether you serve them as individual mini cakes or as petit fours for a special event.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon dried lavender buds
  • 1 Earl Grey tea bag
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lemon
  • Lavender and lemon glaze optional

Instructions:

Warm your oven up to 350F 175C and grease a mold for a mini cake or petit four

Keep the milk warm in a small saucepan over low heat until it doesnt boil

Put in the dried lavender buds and Earl Grey tea bag

If you want the milk to cool down, take out the tea bag and lavender buds after 5 minutes or so

Melt the butter and mix it with the sugar in a bowl until the mixture is light and fluffy

One at a time, add the eggs and mix well after each one

The lemon juice, lemon zest, and vanilla extract should all be mixed in

Mix the flour, baking powder, and salt together in a different bowl

You should add the dry ingredients to the wet ingredients one at a time, starting with the dry ingredients and ending with the infused milk mixture

Dont mix any further than that

Fill each mini cake or petit four mold about two thirds of the way to the top with batter

If you stick a toothpick into the middle of the cake, it should come out clean after 12 to 15 minutes

The mini cakes should cool in the mold for a few minutes before being moved to a wire rack to cool all the way down

If you want, you can decorate the cakes with a lavender and lemon glaze that you make by mixing powdered sugar with a little lemon juice and dried lavender buds
