Mexican Salsa Verde Beef Stew

Ingredients:
- 2 lbs beef stew meat
- 1 cup salsa verde
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can 15 oz diced tomatoes
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 jalapeno pepper, diced optional
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups beef broth
- 1/4 cup chopped fresh cilantro for garnish
Instructions:
Put salsa verde, diced onion, minced garlic, diced tomatoes, black beans, corn kernels, cumin, chili powder, salt, and pepper in a slow cooker
If you want to add jalapeo pepper, do so now
Add the beef broth and mix everything together
Set the timer for 7-8 hours on low or 4-5 hours on high, and cover the pot
Cook until the beef is soft
Serve hot with chopped fresh cilantro on top
